Chocolate Lavender Cupcakes with Blackberry Frosting
We are making cupcakes today!
The star of our show is lavender <3
Here is what you will need!
2 Eggs
1/2 Unsweetened Cup Cocoa Powder
1 1/2 Cups Whole Wheat Flour
1 Cup Sugar
2/3 Cup Hot Water
1/2 Cup Butter(unsalted)
1 3/4 Teaspoon Baking Powder
1 Teaspoon Vanilla Extract
1 Tablespoon Lavender
1/2 Teaspoon Salt
(I prefer pink Himalayan for its mineral properties)
Mix it up!
Ooh chocolate goodness :3
Line the pan with muffin tins and fill
Bake at 350 Fahrenheit for 15 minutes
For the Icing!
3 Cups Icing Sugar
2 Blackberries
1/4 Cup Hot Water
1 Teaspoon Lavender
Mix the hot water, lavender, and blackberries together to create a natural purple food coloring!
Toss the blackberries into the icing sugar and add teaspoons of the hot water with lavender into the icing sugar while mixing until desired texture is reached
Let the cupcakes cool and add the icing to your liking! I like the drizzled, imperfect touche of icing on my cupcakes. It makes it look so homemade in my opinion :) For best presentation, place them on a delicate floral plate and sprinkle extra lavender buds around for a bohemian rustic design!
